My wife recently fixed chicken enchilada stuffed green peppers for dinner, and another night made a side of parmesan summer veggies (rows of sliced yellow squash, zucchini, and roma tomatoes sprinkled with parmesan cheese and baked/roasted in the oven).
Today, I had those as left overs for lunch. I just gotta say, my wife can cook. Love the healthy recipes she finds and tries. Because they are so darn good!
